Baked Acorn Squash

Fall is just around the corner, so here is an easy way to prepare acorn squash.

1 Acorn Squash
1 Tablespoon Extra-Virgin Olive Oil
Butter (optional)
Salt & Pepper

Preheat oven to 400°F.

Cut the squash in half and scoop out the seeds.  A grapefruit spoon works great for scooping out the seeds.  Save the seeds to roast them later.

Drizzle olive oil in a baking dish.  Lay the squash halves in the baking dish cut side down.  Bake until soft, 30-45 minutes depending on size.

Serve with butter and season with salt and pepper to taste.
