Chipotle Mashed Sweet Potatoes

I remember one Thanksgiving as a child I saw sweet potatoes with marshmallows on top and didn’t know what it was. I figured it was carrots and thought it was weird to put marshmallows on carrots, but took some to try. They were most likely canned sweet potatoes, which are odd looking. I thought those carrots were so awful with marshmallows on top. Then I found out they were sweet potatoes and decided that just wasn’t a good dish for Thanksgiving. I still can’t eat sweet potatoes with marshmallows on top. I do like to make sweet potatoes with brown sugar and pecans on top. This recipe, however, isn’t the traditional sweet-as-ever sweet potatoes and is more savory and a little spicy thanks to the chipotle peppers.

Ingredients:
2 large sweet potatoes, peeled and chopped
2 Tablespoons butter
2 Chipotle peppers in adobo, diced
2 teaspoons adobo sauce

Steam sweet potatoes until tender, about 20 minutes.

In a large bowl, mash sweet potatoes with butter, chipotles, and adobo sauce.

Yield: 4 servings
