Chili lime seasoned pork cooked all day in the slow cooker. Serve on buns, in tacos, over rice, in a salad, or any way you like. I have found that cooking the pork all day on high makes it really tender and easy to shred.
Ingredients:
6-7 lbs pork butt
1 lime, juiced
freshly ground black pepper
1 Tablespoon chili powder
1 Tablespoon coarse pink Himalayan salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground coriander
1 teaspoon sumac
Place pork in slow cooker and squeeze lime juice over it.
Grind pepper over the pork. Mix remaining ingredients together in a small bowl and sprinkle over the pork.
Cook on high for at least 8 hours. Shred with two forks when tender enough to shred, after about 6 hours or so, and continue cooking.
