Baked parmesan zucchini spears are a tasty side dish that is fancy enough to entertain with and simple enough to make any night of the week. They are coated in grated parmesan cheese and baked until softened, then crisped up under the broiler to perfection.
To make these baked parmesan zucchini spears, you will need to slice the zucchini lengthwise. It’s best to cut them in quarters, but you could cut them in half if you prefer. These could also be made shorter and into smaller zucchini fries. Just follow the same steps for however you decide to cut them.
The zucchini is coated in a little olive oil to help the cheese and seasonings to stick. Parmesan cheese is combined with dried herbs to make a delicious cheesy coating on these zucchini spears. This could be made with fresh herbs if you have those available.

Parmesan Zucchini Spears
Ingredients
- 4 zucchini, quartered lengthwise
- 2 Tablespoons olive oil
- 1/3 cup parmesan cheese, grated
- 1/2 teaspoon dried thyme leaves
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- salt & pepper
Instructions
- Preheat oven to 350°F.
- Line a baking sheet with foil and place a cooling rack on it. Spray with nonstick cooking spray.
- Arrange the zucchini spears on the cooling rack. Drizzle with olive oil to help the cheese mixture stick.
- In a small bowl, combine parmesan cheese, thyme, oregano, and garlic powder. Season with a pinch of salt and a few grinds of black pepper. Evenly coat zucchini with cheese mixture.
- Bake until tender, about 15 minutes. Brown them under the broiler for 2-3 minutes.
