BBQ Pork and Rice Skillet

One-pot meals are so great because clean up is so simple. I made this skillet dinner with leftover Kalua Pork If you haven’t seen that recipe, click here to check it out. So good! I had some roasted Hatch green chiles from New Mexico in the freezer, but you can just pick up one of those little cans of green chiles. I almost always have all of these ingredients on hand, so I think we will be eating this often.

Ingredients:
1 Tablespoon olive oil
1/4 cup roasted green chiles
3 garlic cloves, minced
1 cup white rice
salt & pepper
14.5 oz can petite dices tomatoes
2 cups water
1 can pinto beans
1 cup frozen corn
1 1/2 cups pulled pork (Kalua Pork)
3/4 cup BBQ sauce
1 cup shredded colby jack cheese

In a large skillet over medium/high, heat the olive oil. Add green chiles and garlic, cooking for about a minute. Add rice and cook until lightly toasted. Season with salt and pepper.

Pour in tomatoes and water. Bring to a bubble, reduce heat, and simmer until rice is cooked, about 10 minutes.

Stir in beans, corn, pork, and BBQ sauce. Cook until heated through.

Top with cheese. Melt under broiler.
