This is delicious. I made it tonight and everyone loved it. I substituted millet for the quinoa (that's what I had). I must make this again.

I've got these in the roaster right now. Can't wait to see how they turn out! I'm out of bread crumbs - but I added garlic & onion powder, salt and pepper. Just a little olive oil. I think they smell wonderful already!!

I thought I had some Dijon when I went grocery shopping, but it got tossed in a recent fridge purge. Very sad. I will have to try it next time with the Dijon!

I love the nutty flavor that roasting gives broccoli. I'm glad you enjoyed the recipe!

Thanks for the recipe. We made this tonight and I thought the spaghetti squash turned out good. I think I would steam the broccoli for the rest of the family (although I liked the nutty flavor it had this way). We added a bit of Parmesan cheese on top at the table. I will make this again.

I also transcribed this recipe from ATK and, including last night, I've made it 4 times since the episode aired. It really is one of the best dishes you can make for less than 5 bucks. I also substitute the vinegar (usually white wine instead of sherry), but I had to comment when I read that you left out the dijon mustard. I'm sure the sauce is still good without it, but it's seriously mind-blowing with it.
